Taboule, Tabulé, etc...

Con esta receta inauguro la seccion Cocina sana para fiacas en honor a  mi amiga Ana. La mayoria de ustedes ya debe haber probado. El tabule es una ensalada de origen libanes con base de cous cous. El cous cous es una forma de trigo. Cuando yo me entere de la existencia de esta ensalada supertentadora ya era celiaca. Por años estuve pensando con que reemplazar el cous cous ya que tiene una textura muy especial. Por suerte la variedad de cereales y pseudocereales que podemos comer se va ampliando y asi me encontre con un reemplazo maravilloso, el mijo!! Un cereal muy rico, sano y no tan caro. 

Instrucciones
- 1/2 taza de mijo crudo a cocinar en 1taza y un poquito mas de agua
- 1 diente de ajo (opcional)
- 1 tomate
- 1 pepino mediano o medio grande
- jugo de un limon
- 1 puñado de menta
- 1 puñado de perejil
- 1 chorro de aceite de oliva
- sal

Instrucciones
Cocinar el mijo con el diente de ajo y un poco de sal hasta que este tierno pero no blandisimo. Revolver y dejar enfriar aparte. Cortar el pepino y el tomate en cubitos chiquitos. Picar las hojas de mente y perejil. Mezclar todo bien con el mijo. Condimentar con el jugo de limon, el aceite de oliva a gusto. Que lo disfruten, a mi me encantó!


 With this recipe I am starting a new section Healthy food for lazy people in honour to my friend Ana. Most of you probably tasted already it. The Taboule is a salad with Lebanese origin with a Couscous base. Couscous is a kind of wheat. When I first seen Taboule I was already a celiac. For years I was looking for a suitable replacement, which was not that easy as Couscous has a very special texture. Luckily our gluten free options had been growing in the last years and finally I came across a wonderful substitue, millet. Itis super healthy, delicious and not that expensive.

Ingredients
-1/2 cup millet to be cooked in 1cup or a bit more water
- 1 clove garlic (optional)
- 1 tomato
- 1 medium cucumber or 1/2 a big one
- juice from 1 lemon
- 1 handful mint leaves
- 1 handful parsley leaves
- olive oil
- salt

Instructions
Cook the millet in double or maybe a bit more of water with salt and the garlic clove until it's tender but not very soft. Stir and let cool aside. Cut tomato and cucumber in tiny cubes, and chop the herbs. Mix them thouroughly with the millet. Season with lemon juice and olive oil to taste. Hope you enjoy it, I loved it!!
