Teff pizza. Pizza de Teff.





Esta es mi primer receta con Teff y quiero decirles que estoy muy satisfecha!! El Teff, es una semilla muy chiquita similar a un cereal sin gluten originario de Etiopia. Es muy rico en proteina, fibras y minerales como el hierro. Yo habia probado algunos productos industriales con Teff como galletas y pan pero nunca puro y nunca habia preparado nada sola. Como hace un tiempo tenia antojo de pizza decidí experimentar asi. Yo hice una version vegana pero tambien funciona perfecto con la clasica salsa de tomate y queso derretido.
Hagan la version que mas les guste, la fantasia puede volar con la pizza!!!

Ingredientes
- 250 gr de harina de teff
- 1/2 cdta de goma xantana
- 1 cdta de levadura seca sin gluten
- 1/2 cdta de azucar
- 1/2 cdta de  sal
- 250ml de agua tibia
- 4 cdtas de aceite
- 4 cdas de salsa de tomate casera
- toppings a gusto, queso muzzarella, hierbas frescas y aceitunas, tomate fresco y ajo, como la que hice yo: hummus, morrones asados y rucula fresca.

Instrucciones
Poner en un bol todos los ingredientes secos: harina de teff, goma xantana, azucar, sal y levadura. Mezclar bien, bien, Agregar el agua tibia, luego el aceite y mezclar animadamente con cuchara de madera hasta que se forma una masa firme. Esparcir la masa en una pizzera aceitada y dejar levar por 60'/90' . Precalentar el horno a 180ºC cubrir con los toppings y hornear por 10'/15'. Yo hice una pizza mediana y una pequeña. Para poder freezarla a la grande solo le puse salsa de tomate y la deje en el horno solo 8'/10'. Luego la saque y la deje descongelar y la cubri con hummus y tiras de morron asado. Siempre que elijamos hojas frescas, como albahaca, rucula o similar, recomendaria ponerlas  al servir luego sacar la pizza del horno. Buon appetito!!!

This is my first recipe with Teff and I have to say I am super satisfied with the result. If you are not familiar with the Teff let me tell you it is a very small seed similar to cereal originally from Eritrea. It has a lot of protein, iron and fiber. I had tasted already some industrialized products with it, but never pure and had never baked with it before. As I was craving for pizza I decided it was a good opportunity to give it a try. I prepared it in a vegan version with homemade hummus, roasted pepper and fresh rocket, but works wonders also with grated cheese. Try your own version, pizza fantasy has no limits!!

Ingredients
- 250 gr teff flour
- 1/2 tsp xantan gum
- 1 tsp dry gluten free yeast
- 1/2 tsp sugar
- 1/2 tsp salt
- 250ml warm water
- 4 tsp oil
- 4 Tbsp homemade tomato sauce
- toppings to taste, my version here is with homemade hummus, roasted pepper and fresh rocket, but you can try with cheese, and olives if you are not vegan, fresh tomatoes and garlic, fresh herbs or whatever comes to your mind

Instructions
Put in a bowl all the dry ingredients, flour, xantan gum, sugar, salt and yeast. Mix thoroughly. Add the warm water, then the oil and mix all with a wooden spoon until it becomes a thick dough. Spread on a oiled baking tray and let rise for around 60'/90'. Preheat the oven to 180ºC. It yields a big pizza but I made a medium one and a small one. I ate the small one right away and decided to freeze the medium one. So I put soem tomateo sauce and baked the one for the freezer just 8'/10'. Let it cool and froze it If you eat it right away bake for arouns10'/15'. For the hummus, pepper, rocket version I would recommend to top it with everything but the fresh leaves before baking. Then add the rocket when serving as with any nice fresh leave to avoid them to shrink. Buon appetito!!

Borscht!!!!

Perdoooooooon, se que estuve ausente por muchisimo tiempo. Estuve trabajando mucho y despues aterrizando... Pero para compensarlos les traiga una receta espectacular. Supongo que habran oida hablar del Borscht. Es una sopa tipica de Europa del Este que tiene version de invierno y version de verano. En dias de frio Berlin es mi plato favorito en un pequeño restaurant ruso en Wedding y viendo las hermosas remolachas que tenian estas ultimas semanas en Buenos Aires me inspiré para hacer una version un poco libre para servir en una cena con amigos. Estaba un poco nerviosa porque entre mis invitados contaba con un chef profesional y 2 vocacionales muy talentosos. Pero finalmente fue un exito. Da un poco mas de trabajo que mis recetas habituales pero se puede preparar con anticipacion y armar el plata en el momento.

Ingredientes (para 6 porciones)
- 4-6 remolachas dependiendo del tamaño
- 2 tazas de jugo de coccion de las remolachas
- 1 1/2 tz de caldo *
- jugo de medio limon
- 2 cdas de vinagre de arroz
- 1 cdta de miel o azucar morena
- 150cc de yogur natural sin endulzar
- sal
- pimienta
- 1 pepino pequeño o 1/2 gde
- 5 rabanitos
- 6 cdas de queso blanco 
- wasabi a gusto

 *usar caldo sin gluten o hervir unos trocitos de verdura como una zanahoria una rama de apio y una cebolla con un poco de sal y especias si gustan, por un rato y voila, caldo de verduras casero!

Instrucciones
Lavar las remolachas a conciencia, yo las cepillo en general para sacar bien toda la tierra. Poner en una olla cubrir apenas con agua y hervir hasta que esten tiernas. Dejar enfriar. Retirar las remolachas. Colar el jugo de coccion y separar 2 tazas en un bowl amplio. Agregar el caldo frio, el jugo de limon, el vinagre, la miel, la sal y pimienta y mezclar bien. Pelar y cortar las remolachas en trozos asi nomas y agregar al bol. Procesar con minipimer y sumar el yogur. Procesar todo hasta que quede homogeneo. Refrigerar al menos un par de horas antes de servir. A la hora de servir, cortar los pepinos y los rabanitos en cubitos pequeños, de medio centimetro de lado. Mezclar el queso blanco con la cantidad de wasabi que gusten. Servir bien frio, poniendo 2 cucharadas de cubitos de pepino y rabanito y una de queso crema en cada porcion. Un plato muy refrescante y sano para lucirse las noches de verano, mis invitados estaban muy felices !!!
I am so sorry I've been away for so long. I had loads of work and then changin continents. But to make it up for you I bring a wonderful recipe. I guess you heard about Borscht already. It is a fantastic east european traditional recipe with a lot of different versions. In the cold days in Berlin it is my favourite dish at a small russian restaurant in Wedding. In the last days the red beets were so nice here in Buenos Aires I got inspired. I was a bit nervous because I prepared it for the first time for a dinner with friends, and i had as guests 1 professional chef and 2 amateur ones but really good ones. But finally it was a huge success. It needs a bit more work than my ususal recipes but it is totally worth it and it can be prepared in advance, even the day before and set together afterwards.

Ingredients (shields 6 )
- 4-6 red beets
- 2 cups from the red beets cooking liquid
- 1 1/2 cups vegetable broth*
- juice of 1/2 lemon
- 2 Tbsp rice vinegar
- 1 tsp honey or brown sugar
- 150cc natural unsweetened yogurt
- salt
- pepper
- 1 small cucumber or half a big one
- 5 radishes
- 6 Tbsp cream cheese
- wasabi to taste
 * the broth should be gluten free, if you want to make a home made one just boils some carrot, celery and onion with a dash of salt and some sipces if you like. Voila! Homemade broth!

Instructiones
Wash the beets thouroghly, I brush them to take all the earth out. Boil them covered in water until they are tender. Let cool. Set the beets aside and strain the liquid where the beets where boiled. Measure 2 cups into a bowl. Add the broth, lemon, juice, vinegar, honey or sugar, salt and pepper and stir. Peel and ccut in big pieces de beets, add in the bowl and mix with a hand mixer, add the yogurt and mix again until the soup has a smooth texture. Put in the fridge for at least 2 hours before eating it. To serve it, cut the radishes and cucmber in small cubes of half a centimeter side. Mix the cream cheese with wasabi to taste. Serve a portion of the soup, add 2 tablespoons pf the radish-cucumber cubes and add one tablespoon of the wasabi cream cheese. It is a super refreshing summer dish and my guests were very impressed. Super soup!!! Super sopa!!

En Berlin llego el otoño y con las hojas doradas y rojas, el frio y la posibilidad de resfriarse. Yo pase casi todo este año esquivandole el bulto y aqui les revelo mi arma secreta. La super sopa!! Si cada vez que me empieza a picar un poco la garganta preparo inmediatamente una gran olla con esta sopa y como hasta que se acabe alternando con te de jengibre fresco y miel. Es super super simple, sana y deliciosa. Aca mi version favorita con zapallo japones u Hokkaido como lo llaman aca en Alemania. En este momento es temporada y se consiguen unos riquisimos. El jengibre y el ajo son antisepticos naturales, y el toque de leche de coco, le da suavidad a la garganta y equilibra el picor del jengibre y el ajo. Si no les gusta el ajo pueden obviarlo y si no tienen este tipo de zapallo, se puede reemplazar por zapallo anco o zanahorias. Se puede freezar en porciones y tener siempre listo en caso de emergencia. Guten Apetit!

Ingredientes
- 1 zapallo japones o el que gusten que sea dulzon, de alrededor de 1 kg)
- 1 buen trozo de jengibre, un pulgar entero mas a gusto.
- 1 o 2 dientes de ajo a gusto
- 1 cdta de sal marina gruesa
- agua cantidad necesaria
- 100 cc de leche de coco
- Menta o cilantro o semillas tostadas o el topping que mas les guste

Instrucciones
Lavar el zapallo cuidadosamente, si usan anco pelarlo. Cortarlo en cubitos y poner en una olla. Cortar el jengibre en trocitos muy pequeños, picar o rallar a gusto. Yo prefiero que queden algunos para morder luego. Picar el ajo cuidando de sacar el brote y agregar a la olla. Agregar la sal y cubrir con agua per no del todo,asi queda bien cremosa, si les gusta mas liquida pueden poner mas. Poner al fuego y dejar cocinar por aprox 15/20 o hasta que el zapallo este bien tierno. Agregar la leche de coco y procesar con la minipimer hasta que quede se vea como una crema. Cocinar un par de minutos mas y servir decorando con menta, cilantro y/o semillas. Buen provecho y a pasar el invierno con la panza calentita y contenta!




It is already Autumn in Berlin and with the golden leaves came the cold and the posibility of getting sick. I avoid getting a cold this whole year even been surrounded by sneezing and coughing people and here I reveal my secret weapon. The super soup!! every time my throat itches a bit I made a big pot of these soup and eat it until is over alternating with fresh ginger tea with honey. It's super easy, fast and delicious. Here is my favourite version with red kuri squash, called hokkaido here in Germany. Now it is the season and it is possible to get some incredibly tasty. The ginger and the garlic are natural antiseptic agents and the coconut milk gives softness and balances with the ginger and garlic. If you don't find some nice Red kuri, you can do it with any sweet squash type or even carrots. You can freeze it in portions that will save you in a case of emergency.

Ingredients
- 1 Red kuri squash (around 1 kg)
- 1 big piece of ginger, I usually use something like a full thumb size
- 1 or 2 garlic cloves
- 1 tsp sea salt
- water
- 100 cc coconut milk
- Mint or cilantro or and toasted seeds

Instructiones
Wash the squash thouroghly, if you use a butternut or another with thicker skin, peel them. Cut it in small cubes and lay in a pot. Cut, shredd or chop the ginger to your taste and also the garlic (taking the sprout out)  and add to the pot. Add the salt. Cover most of it but not all if you want it really creamy or completely if you like it more liquid. Put it on the stove for around 15/20 minutes or until the squash is tender. Add the coconut milk and lett boil for a little more. Serve garnished with mint, cilantro or toasted seeds to taste. Guten Apetit!

Buckwheat Pancakes. Pancakes de trigo sarraceno.



Habia probado esta receta hace un tiempito pero estuve tan ocupadisima que no la pude postear. Hoy domingo helado pero soleado con las calles doradas de las hojas secas de otoño decidi mimarme con esto. Es una manera muy facil, sano y rica de entibiar la pancita. Aqui la receta, sientanse libres de cambiar la harina por la que tengan en casa y usar leche vegetal o de vaca si no son veganos.

Ingredientes
- 1 taza de harina de trigo sarreceno integral sin gluten
- 1 cdta de polvo de hornear sin gluten
- 1 pizca de sal
- 1 taza de agua (yo los hice con agua) o leche vegetal a gusto
- 1 cdta de vinagre de manzana
- 2 cdas rasas de pure de manzana
- 1 manzana
- 1 cda de canela
- jarabe de agave a gusto

Instrucciones
Mezclar en un bol todos los ingredientes secos, harina, sal, polvo de hornear. En otro bol mezclar los humedos, si usan leche no pongan el vinagre en este paso si no al final. Unir los humedos y seco mezclando con un batidor de varillas hasta obtener una mezcla homogenea. Dejar reposar 5 minutos. Mientras pueden cortar la manzana en rodajitas y espolvorear con la canela. Preparar una sarten antiadherente o de hierro y un poco de aceite de coco. Calentar bien la sarten, es importante que este bien caliente para que la masa se selle inmediatamente. Siempre conviene mezclar un poquito la mezcla porsi se asento de masiado. Agregar un pizquita de aceite de coco a la sarten hacer correr para que cubra la superficie y volcar una porcion de la mezcla. Esperar a que se hagan burbujas que se convierten en agujeritos y que los bordes esten sequitos y dar vuelta. Dejar dorar apenas unos segundos y repetir la operacion con el resto de la mezcla. Una vez hechos todos los pancakes, yo los arme asi, un pancake, rodajitas de manzana con canela y un chorrito de jarabe, otro pancake, y mas manzana y jarabe un ultimo pancake y un poco mas de jarabe. Tambien los habia probado con crema de chocolate y queda espectacular!!! les pongo la foto a modo de inspiracion!!! mmmññami!




I tested this recipe a while ago but somehow could not manage to post it. Today is a cold but sunny Sunday and I decide to treat myself with this. It is a super easy, healthy and delicious way to warm the belly and the heart. Here the recipe, feel free to change the flour if you do not have Buckwheat and to use milk or vegetable milk if you feel like it.

Ingredients
- 1 cup gluten free buckwheat flour
- 1 tsp gluten free baking powder
- 1 pinch of  salt
- 1 cup of water, or milk of your taste, i made mine with just water
- 1 tsp apple cider vinegar
- 2 flat Tbsp applesauce
- 1 apple
- 1Tbsp cinnamon
- Agave Syrup to taste

Instructions
Mix all th dry ingredients in a bowl. In a separate bowl mix all the wet ones avoiding the vinegar if you are using any kind of milk. Mix the wet and the dry thouroughly with a whisk and add the vinegar if you were using milk. Let rest 5 minutes. Slice the apple and sprinkle with the cinammon. Heat well a skillet or a non-stick pan, it's very important that it is really hot. Stir a bit the batter. add a tiny bit of coconut oil to the pan and pour a portion of the batter. Wait until it starts to bubble and the bubbles leave a tiny hole where they where and the borders are dry, turn them and let the golden a couple of seconds on the other side. Repeat until you finish the batter. I prepare mine like this, one pancake, slices of apple some syrup, another pancke more apple more syrup another pancake and more syrup. I also tried it with dark chocolate cream and it tastes amazing, I'll post also this pic. Yummy!!

Buckwheat Carrot cake. Torta de zanahoria con trigo sarraceno.

Se fue el verano de Berlin y me dio ganas de hornear torta! Hace rato que queria probar hacer alguna version de carrot cake. Y tambien queria hacer alguna receta en frascos. Me habia autoregalado para mi ultimo cumpleaños los frasquitos Weck's que son de vidrio templado y hacen unas hermosas tortitas individuales. Con esta cantidad saque 4 bastante grandes y creo que salen 6 medianos. O se pueden hacer unos 8 muffins medianos o 12 pequeños. Como soy una amante de los sabores simples, no hice ningun frosting sino que eche unas almendras fileteadas. Para agilizar un poco las cosas no ralle la zanahoria y la manzana a mano , sino que la pique con la procesadora Sale super tierna y jugosa pero ojo recomiendo comerlas recien salida del horno o freezar inmediatamente porque luego se pueden volver gomosas.
Yo las freeze y cuando me da antojo, tengo a mano una dulzura, sin gluten y ademas sana. Recuerden siempre freezar trozadas las tortas. Espero que les guste!!

Ingredientes
- 125 gr de premezcla (yo use Farina de Schaer)
- 100 gr de harina de trigo sarraceno
- 2 cdtas de polvo para hornear libre de gluten
- 1 cda de canela
- 3 cdas de lino molido hidratados en 6 cdas de agua y reposados 15' en la heladera
- 125 gr de azucar integral
- 100 cc de aceite de maiz o alguno neutro a gusto
- 200 gr de zanahoria rallada
- 1 manzana mediana rallada
- 1 trozo de jengibre rallado(a mi me encanta asi que puse uno grande)
- 150 cc de jugo de naranja
- un puñado de pasas de vuva (opcional)
- 3 cdas de almendras fileteadas(opcional)
 
Instrucciones
Preparar la mezcla de lino molido y agua y poner a reposar en la heladera. Precalentar el horno a 180ºC si es gas o 200º si es electrico. Engrasar y espolvorear, el o los moldes. Mezclar todos los ingredientes secos excepto el azucarcon un batidor de varas. En otro bowl mezclar el lino hidratado con el azucar y el aceite hasta que este bien homogeneo. Agregar la zanahoria, la manzana rallada y el jengibre y sumar el jugo de naranja y si quieren las pasas de uva. Mezclar todo bien hasta este homogeneo. Unir lo humedo y los seco y agregar un puñado de pasas de uvaLlenar el o los moldes por la mitad o maximo 2/3. A gusto agregar almendras fileteadas. Hornear 25' o hasta que esten doradas y al pinchar con un palillo salga limpio. A disfrutar para el te o para un desayuno de invierno.
 


 
Summer is gone from Berlin so I wanted to bake some cake. It is been a while I wanted to try some kind of carrot cake and also I got myself as a brithday present some Weck's jars, they can go to the oven and they are perfect for personal cakes like the ones I did. It shield 4 big personal cakes, 6 medium or you can also made them into muffins. I know carrot cake it's suppoused tohave a frosting but I don't really like them so I topped them withsliced almonds. Not to waste to much time grated the carrots, the apple and the ginger with the chopping tool of the handmixer. As many vegan and glutenfree recipes the texture is changing with the time so I recommend to eat them fresh out of the oven or freeze it in portions to eat later. It's perfect company for a nice tea or cold day breakfast. Hope you enjoy!

Ingredients
- 125 gr flour mix (I used Farina de Schaer)
- 100 gr Buckwheat flour
- 2 tsp baking powder
- 1 Tbsp cinnamon
- 3 Tbsp flax meal mix with 6 Tbsp water and rested 15' in the fridge

- 200 gr carrots grated
- 1 medium apple grated
- 1 piece of ginger grated
- 150 cc orange juice
- a handful of raisins (optional)
- 3 Tbsp of sliced almonds(optional)
 
Instructiones
Mix the flaxmeal with the water and let rest in the fridge for about 15 minutes. Preheat oven into 180ºC gas 200 electric.  Grease you cake tin, cake jars or muffinforms and dust them with gluten free flour. Mix thoroughly all the dry ingredients except the sugar. In another bowl mix the flaxmeal preparation with the sugar and oil until it's even and add the grated carrots, apple and ginger and if you want raisins. Mix dry and wet ingredients until the batter is smooth and fill the glass up half or maximum 2/3 of it.Top with the sliced almonds and bake for 25 minutes ir until the top is golden and/or when a toothpick comes out kind of clean. I love it as a company for a nice tea or a heartwarming cold morning breakfast. Hope you like them!!

Chickpea pancakes. Panqueques o ponques de garbanzo

 
Si, se dieron cuenta, estoy haciendo un poco de trampa...pero bueno es que me dio antojo y es taaan facil que pense que valia la pena postearlo igual. Esta receta es la hermana de esta otra de panqueques . 
Lo que tienen de bueno estos panqueques es que son una buena fuente de proteina y ayudan a empezar el dia con mucha energia sin ser pesados. Y quizas no se les habia ocurrido usarlos en version dulce. Yo los prepare esta vez con semillas de lino, girasol y lino, jarabe de agave y acompañe con uvas y frutillas, pero solo porque era lo que tenia. Pueden usar nueces picadas en vez de semillas, canela, y de topping pueden poner lo que gusten, dulces, miel, manteca de mani o pures de frutas. Buen provecho!!

 Ingredientes
- 1 taza de harina de garbanzo
- 1 taza de agua
- 1 cda de semillas de lino
- 1 cda de semillas de girasol
- 1 cda de semillas de sesamo
- 1 chorrito de jarabe de agave, arce o lo que mas les guste
- fruta a eleccion.

Instrucciones
Mezclar el agua y la harina en un bol con un batidor de alambres hasta que quede una mezcla homogenea. Dejar reposar 5 minutos. Mientras la mezcla reposa calentar una sarten un minuto, poner las semillas y tostar suavemente. Retirar las semillas tostadas y poner en un bol. Volver a poner la sarten al fuego. Si usan una sarten antiadherente no necesitan poner materia grasa, si no apenas un poquito de margarina o aceite de coco. Mezclar un poco la mezcla y tomar una porcion con un cucharon aproximadamente 3/4 de la capacidad y volcar en la sarten bien caliente. Cuando hace las primeras burbujitas echar un puñado de semillas tostadas. Cuando los bordes se empiezan a despegar, dar vuelta y dejar dorar unos momentitos. Repetir hasta usar toda la mezcla. Con una taza de harina yo saque 4 panqueques. Servir con un chorrito de jarabe de agave y acompañar con frutas frescas de estacion. Voila!


  
Ok, you got me cheating but i really wanted these for breakfast and they are soo easy i thought it was worth posting them anyway. Yes this is the sister recipe from this one.
The fantastic thing about these pancakes is that they are a good protein source, that gives you a boost to start the day and easy to digest.And maybe you didn't thought of making them sweet... i ate them with agave syrup and fresh strawberries and grapes because that was what I had at hand but it's also delicious with jam, honey, peanut butter and any fresh fruit you have around.

 
 Ingredients
- 1 cup garbanzo/gram/chickpea flour
- 1 cup water
- 1 tsp flaxseeds
- 1 tsp sunflowerseeds 
- 1 tsp sesame seeds
- 1 shot agavesyrup, maple syrup or topping of your choice
- fresh fruit

Instructions
Mix the flour and the water with a whisk until the batter is totally even. Let rest for 5 minutes. In the meantime heat a skillet and toast the seeds until softly golden. Set aside in a bowl. Put the skillet back in the heat and add some coconut oil or margarine if not using a non adherente one. Mix the batter to even  and pour 3/4 of a ladle on the hot skillet. When it start to bubble, prinkle with seeds. When the ends start to let loose turn and let golden for a moment. Repeat with the rest of the batter. With this recipe I got a 4 pancakes shield. Serve with a shot of syrup and garnish with fresh fruit. Voila!

Softly caramelized tofu with fennel and sweet potato. Tofu suavemente caramelizado con hinojo y batata


Esta receta es como una cena de restos o cocino algo con lo que tengo. Los ultimos dias estuvo trabajando como loca y no tuve tiempo de cocinar ni siquiera de hacer compras pero despues de varios dias de comer cualquier cosa me queria mimar con una cena nutritiva y deliciosa. Lo que me quedaba en la heladera era un paquete de tofu, un hinojo y afuera de la heladera una batata a punto de brotarse unos dientes de ajo y un trocito de jengibre. Con la ayuda de algunos otros ingredientes que siempre tengo por ahi logre un plato muy rico!

Ingredientes
- 200gr de tofu firme
- 2 cdtas de aceite de coco
- un chorro generoso de salsa de soja sin gluten
- 3 dientes de ajo
- 2 chorritos de jarabe de agave (o miel si no son veganos)
- 1 pizca de sal
- 1 batata mediana
- 1 hinojo mediano
- 1 trocito de jengibre

Instrucciones
Poner a drenar el tofu. Cortar la batata y el hinojo en cubitos, picar los dientes de ajo y el jengibre. Reservar. Cortar el tofu en rodajas y poner en un plato playo, rociar con el chorro de salsa de soja. Dejar macerar un par de minutos, dar vuelta y dejar macerar un par de minutos mas. Calentar una sarten y agregar una cdta de aceite de coco. Poner las rodajas de tofu (ojo no tirar la salsa de soja que queda en el plato!)a dorar en el aceite caliente con uno de los dientes de ajo picados, dorar un minuto de cada lado y agregar la salsa de soja que quedo en el plato y el chorro de jarabe de agave volver a dar vuelta y retirar. En la misma sarten sin limpiar calentar la otra cucharadita de aceite de coco. Agregar, el hinojo, la batata, el ajo restante y el jengibre. Mezclar energicamente por un par de minutos tratando de que todo se dore un poquito, agregar una pizca de sal para que las verdurar suelten liquido y tapar. Ir revolviendo cada tanto, si parece que se esta por quemar agregar un poquito de agua. Dejar cocer hasta que al pinchar la batata este tierna. Servir  junto al Tofu decorando con un poquito de perejil o cilantro. A disfrutar!!


 
This is kind of a leftover dinner, I've been working like crazy and hardly had time to do the shopping, but after eating whatever on the way for some days I wanted to spoil me with a nutritious and delicious dinner. What we had in the fridge was: a piece of tofu, a fennel, and outside the fridge a sweet potato some garlic and some ginger. With a little help of some other ingredients I always have in the pantry I achieved a very tasty dish!

Ingredients
- 200 gr firm tofu
- 2 tsp coconut oil
- a generous shot of gluten free soy sauce
- 3 cloves garlic
- 2 shots agave syrup (or honey if you are not vegan)
- 1 pinch of  salt
- 1 medium sweet potato
- 1 medium fennel
- 1 small piece of ginger

Instructions
Let the Tofu drain. Cut the sweet potato and the fennel in small cubes, chop the ginger and garlic, leaving one chopped clove apart. Set aside. Slice the tofu and lay on a plate. Pour the soy sauce over it let rest for a minute and turn to soak the other side. Heat a skillet and add one tsp coconut oil. Lay the tofu slices (don't throw the remaining soy sauce!) on the skillet one minute each side, then add the remaining soya sauce and one of the chopped garlic cloves. Let the slices get softly golden on each side. and take them out of the skillet. On the same skillet without cleaning it. Add the other tsp of coconut oil, and lay the fennel, sweet potato, remaining garlic and ginger. Stir with energy a couple of minutes add the pinch of salt to allow the veggies to free some liquid and cover. Let cook a bit and stir, let cook more until the sweet potatoes are tender. Serve with the tofu and garnish with parsley or cilantro to taste. Enjoy!!
