Teff pizza. Pizza de Teff.
Esta es mi primer receta con Teff y quiero decirles que estoy muy satisfecha!! El Teff, es una semilla muy chiquita similar a un cereal sin gluten originario de Etiopia. Es muy rico en proteina, fibras y minerales como el hierro. Yo habia probado algunos productos industriales con Teff como galletas y pan pero nunca puro y nunca habia preparado nada sola. Como hace un tiempo tenia antojo de pizza decidí experimentar asi. Yo hice una version vegana pero tambien funciona perfecto con la clasica salsa de tomate y queso derretido.
Hagan la version que mas les guste, la fantasia puede volar con la pizza!!!
Ingredientes
- 250 gr de harina de teff
- 1/2 cdta de goma xantana
- 1 cdta de levadura seca sin gluten
- 1/2 cdta de azucar
- 1/2 cdta de sal
- 250ml de agua tibia
- 4 cdtas de aceite
- 4 cdas de salsa de tomate casera
- toppings a gusto, queso muzzarella, hierbas frescas y aceitunas, tomate fresco y ajo, como la que hice yo: hummus, morrones asados y rucula fresca.
Instrucciones
Poner en un bol todos los ingredientes secos: harina de teff, goma xantana, azucar, sal y levadura. Mezclar bien, bien, Agregar el agua tibia, luego el aceite y mezclar animadamente con cuchara de madera hasta que se forma una masa firme. Esparcir la masa en una pizzera aceitada y dejar levar por 60'/90' . Precalentar el horno a 180ºC cubrir con los toppings y hornear por 10'/15'. Yo hice una pizza mediana y una pequeña. Para poder freezarla a la grande solo le puse salsa de tomate y la deje en el horno solo 8'/10'. Luego la saque y la deje descongelar y la cubri con hummus y tiras de morron asado. Siempre que elijamos hojas frescas, como albahaca, rucula o similar, recomendaria ponerlas al servir luego sacar la pizza del horno. Buon appetito!!!
This is my first recipe with Teff and I have to say I am super satisfied with the result. If you are not familiar with the Teff let me tell you it is a very small seed similar to cereal originally from Eritrea. It has a lot of protein, iron and fiber. I had tasted already some industrialized products with it, but never pure and had never baked with it before. As I was craving for pizza I decided it was a good opportunity to give it a try. I prepared it in a vegan version with homemade hummus, roasted pepper and fresh rocket, but works wonders also with grated cheese. Try your own version, pizza fantasy has no limits!!
Ingredients
- 250 gr teff flour
- 1/2 tsp xantan gum
- 1 tsp dry gluten free yeast
- 1/2 tsp sugar
- 1/2 tsp salt
- 250ml warm water
- 4 tsp oil
- 4 Tbsp homemade tomato sauce
- toppings to taste, my version here is with homemade hummus, roasted pepper and fresh rocket, but you can try with cheese, and olives if you are not vegan, fresh tomatoes and garlic, fresh herbs or whatever comes to your mind
Instructions
Put in a bowl all the dry ingredients, flour, xantan gum, sugar, salt and yeast. Mix thoroughly. Add the warm water, then the oil and mix all with a wooden spoon until it becomes a thick dough. Spread on a oiled baking tray and let rise for around 60'/90'. Preheat the oven to 180ºC. It yields a big pizza but I made a medium one and a small one. I ate the small one right away and decided to freeze the medium one. So I put soem tomateo sauce and baked the one for the freezer just 8'/10'. Let it cool and froze it If you eat it right away bake for arouns10'/15'. For the hummus, pepper, rocket version I would recommend to top it with everything but the fresh leaves before baking. Then add the rocket when serving as with any nice fresh leave to avoid them to shrink. Buon appetito!!

Fancy Spicy Cabbage salad. Ensalada picante y elegante de repollo.
Hace unos dias fue mi cumpleaños. Para festejarlo invite a algunos amigos a cenar a casa. Como estos dias estoy trabajando mucho no tenia mucho tiempo para preparar comida y pense que hacer un salad bar era la mejor manera de armar una linda cena de verano apta para todo publico veganos celiacos y alergicos varios. Asi que arme la siguiente lista: Tabule celiaco infaltable en mi mesa y casi siempre un hit asegurado, una ensalada de pasta, una ensalada de 3 tipos distintos de porotos con cebollita de verdeo y pasas y esta ensalada que fue la sorpresa de la noche. Asi que aqui la comparto:
Ingredientes
- 1/4 de repollo colorado (si es chiquito 1/2)
- 2 zanahorias
- 1 manzana
- 1 lima
- 1 nudito de jengibre
- cilantro (optativo)
- aceite de oliva
- una cdta de miel o jarabe de agave o arce para la version vegana
- 1 pizca de sal
Instrucciones
Cortar el repollo bien finito, si tienen mandolina mejor. Lavar, pelar y rallar las zanahorias. En un bol exprimir el jugo de la lima, rallar o picar muy chiquito el jengibre y agregar al jugo y sumar el chorrito de miel o el jarabe. Mezclar todo bien. Cortar la manzana en cubos o rectangulos chiquitos y sumergir en la mezcla del jugo. Mezclar bien. Poner en la ensaladera el repollo, la zanahoria, agregar la mezcla de manzana con jugo, condimentar con un chorrito de aceite de oliva, una pizca de sal y cilantro si les gusta. Voila!
My birthday was some days ago. To celebrate it I invited some friends over for dinner. As I am very busy these days I thought that a salad bar was a nice easy delicious way to put together a dinner gluten free, vegan, allergy free dinner. So on the table I had Gluten free tabule a must in my table and a guaranteed success, a 3 bean salad with spring onions and raisins, a pasta salad and this one that was the surprise of the evening as everyone loved it. So here is the recipe for you to enjoy it:
Ingredients
- 1/4 red cabbage (if it's a small one 1/2)
- 2 carrots
- 1 apple
- 1 lime
- 1 small ginger piece
- cilantro (optional)
- olive oil
- 1 tsp honey or maple/agave syrup for the vegan version
- 1 pinch salt
Instructions
Cut the cabbage in thin slices. Wash peel ans shredd the carrtos. In a bowl squeeze the lime juice. Cut or shred the ginger and add in the bowl. Add the honey or syrup and mix well. Cut the apple in small squares or rectangles and put in the powl with the juice. Mix well. In a salad bowl put the cabbage, the carrots and the apple juice mix,add a bit of olive oil and a pinch of salt. Mix everything again and decorate with a bit of cilantro if you like. Voila!

One pot Brown risotto / Risotto integral en una olla
Este es un clasico comida facil para gente fiaca, o me arreglo con lo que hay en la heladera para inventarme un almuerzo. Se usa una sola olla y lo que habia en casa. Yo tenia una cebolla de mi huerta, una berenjena y un zapallito redondo, que es tipico de argentina pero puede ser reemplazado por un zucchini.
Ingredientes
- 1 taza de arroz integral (yo use yamani, uno de grano
redondo cortito)
- 1 cebolla
- 1 berenjena mediana
- 1 zapallito redondo o largo
- 1 puñado de pasas de uva
- aceite neutro
- agua caliente cantidad necesaria
- sal
- una pizca de crema
- wasabi en polvo
- 1 cebolla

Instrucciones
Cortar la cebolla por la mitad y despues en rodajas. Cortar la berenjena y el zapallito en cubos o rodajas y en cuartos o como mejor les apetezca. Poner una olla en el fuego, con un chorrito de aceite, agregar la cebolla y dejar rehogar un poquito, agregar el arroz y las verduras en cubitos y salar (yo lo hice generosamente ya que no use caldo pero queda a gusto) para que las verduras larguen un poco sus jugos, mezclar energicamente para que todo se dore apenitas y agregar un chorro de agua caliente. Ir mezclando para que no se pegotee el fondo. Ir agregando agua caliente a medida que se va consumiendo siempre cubriendo ligeramente el arroz. Despues de agregar un par de veces sumar el puñado de pasas de uva y 2 cdtas de wasabi. Ir probando hasta que el arroz este cocido a gusto, a mi me gusta bien tierno, pero tambien puede ser al dente. Yo lo servi con una cucharadita de crema y espolvorear una pizca mas de wasabi en polvo por encima, pero si quieren la opcion vegan pueden saltear la crema o reemplazarla por una de origen vegetal. This a classic healthy food for lazy people, or I make something up with whatever I have in the fridge. You need to clean a board and only one pot. I had on onion from my garden, one aubergine, one kind of zucchini (a round one typical from Argentina) but you can use just a zucchini.
Instructions
Cut the onion in halves and then slice it roughly. Cut the aubergine and the zucchini in medium cubes. Heat some oil in a pot. Add the onions and stir for a minute, add the rice, stir again, add the vegetables and salt to let the veggies loose some liquid. Mix thoroughly until the vegetables start to be slightly golden and add some hot water, until the rice and veggies are covered. Let simmer and add water as it is absorbed. Keep stiring to prevent the risotto from sticking. After you add water for the second time add the raisins and some 2 or 3 teaspoons of wasabi powder. Add more water and let simmer until the rice is tender. Serve with a dash of cream and sprinkle with wasabi powder or for the vegan version you can use vegan cream or just skip it. Buon
