Panqueques de Teff. Teff Pancakes

 
Casi no me puedo atribuir el merito de esto, es la receta mas facil del mundo y no tiene nigun secreto. Debe se haber miles de recetas dando vueltas por ahi muy similares. Me levanté con antojo de algo dulce y miré que me quedaba en la heladera, un huevo, un poco de leche y un puchito de harina de teff. Suficiente para unos pancakes. Si no tienen harina de teff, seguro que funciona con sarraceno o sorgo. Lo bueno de los pancakes es que se hacen en el momento, no hay que prender el horno. Yo los comí con jarabe de agave, manzana en rodajas y coco rallado, pero vale poner lo que quieran, mermelada, fruta fresca, nueces, compota, o lo que se les ocurra. Ahi va la receta, espero que les guste!

Ingredientes
- 1 huevo
- 1/2 taza de leche
- 1/3 taza de harina de teff
- 1 cdta de polvo para hornear
-  Aceite de coco para la sarten

Instrucciones
Batir el huevo y la leche, agregar la harina con el polvo de hornear. Recomiendo cernir la harina para que se airee y la masa quede mas esponjosa. Calentar una sartén de hierro o antiadherente, poner una pizca del  aceite de coco. Agregar porciones a la sarten y dejar cocer hasta que se formen burbujas y los bordes se doren, dar vuelta, dejar dorar del segundo lado. Repetir hasta terminar la mezcla. A mi me salieron unos 4, perfecto para un desayuno de a 2 si no son glotones. Buen desayuno!!! 



I cannot claim authorship for this recipe, because it is so simple and easy I am sure there's a lot of similar ones out there. But I woke up up with a sweet tooth and check what I had in the fridge. One egg, a bit of milk, and some spare teff flour. Enough to make some pancakes. If you don't have teff flour, I'm sure it works just fine with buckwheat or sorghum. The nice thing about pancakes is that they are fast and you don't need to turn on the oven. I prepared them with apple, shredded coconut and agave syrup but you can top it with your favourite thing fresh or dried fruits, jam, nuts, peanut butter. I hope you like them !!!

Ingredients
- 1 egg
- 1/2 cup of milk
- 1/3 cup teff flour
- 1 tsp baking powder
-  Coconut oil for the pan.

Instructions
Whisk the egg with the milk, add the flour with the baking powder, I recommend sifting it to have a fluffier pancake
Heat a skillet or a non-stick pan, put a bit of coconut oil and lay a portion of the dough let it cook until the dough bubbles and the the borders start to be golden. Turn, let it golden on the other side, and keep doing it until the mix is finish. I got 4 pancakes, if you are not too greedy it's a perfect breakfast for two. Enjoy!!

Banana coconut pancakes. Pancakes de banana y coco


Esta receta la hice por primera vez hace un tiempito pero no tuve tiempo de postearla hasta ahora. No tenia casi nada en casa y decidi improvisar con lo que tenia. Es super facil, se necesitan solo 3 ingredientes, se hace en un ratito y es mhmhmhmhm delicioso. Ojala les guste!

Ingredientes
- 1 banana muy madura
- 1 huevo
- 50 gr de coco rallado (1/2 taza aprox.)

Instrucciones
Pisar la banana haciendo un pure lo mas homogéneo posible. Agregar el huevo y mezclar bien, sumar el coco y volver a mezclar hasta que este todo bien unido. Calentar una sartén de hierro o antiadherente, si son paleo estricto poner un poquito de aceite de coco, si no pueden usar rocio vegetal o un poquito de aceite neutro o manteca. Poner porciones de una cucharada generosa aplastando levemente para que queden parejos. Esperar a que la base este bien dorada para darlos vuelta, del segundo lado va a necesitar menos tiempo. Y listo! acompañar con fruta fresca o lo que mas les guste. Con esta cantidad salen 6 pancakes, una linda cantidad para desayunar de a 2.


I prepared these pancakes some time ago, as I had almost nothing at home and improvised this. IThis year has been so hectic I hadn't have time until now to post it. It is super easy, you need only 3 ingredients and it is super delicious.

Ingredients
- 1 banana very ripe
- 1egg
- 50 gr shredded coconut (1/2 cup approx.)

Instructiones
Mash the banana until you get a nice even puree. Add the egg and mix it thouroughly, the add the coconut and mix it again. Heat a skillet or non-stick pan and grease it with your choice, coconut oil or if you are not strict paleo some neutral oil. Put a generous tablespoon of the mix on the heated skillet, evening the top. Wait until they are really golden in the base to turn them. The second side needs less time. That's all! This amount usually serves 6 pancakes, making it a nice breakfast for 2.

Lemon Sorghum Cookies. Galletitas de sorgo y limon




Hace un tiempo compré harina de sorgo por curiosidad. El Sorgo un cereal originario de Africa que  historicamente se usado para alimentar animales pero en los ultimos tiempos se popularizo entre los humanos ya que tiene un gran valor nutricional. Estuve un tiempo pensando que hacer y finalmente me animé. Como no le tenía mucha la onda decidi hacer como primer prueba unas galletitas que son medio infalibles. Esta vez no llegue a probar la versión vegana asi que sale la solo gluten free y en algún momento cuando pueda probaré la vegan. Recomiendo hacerlas bien chiquitas para que se quiebren menos y es una medida genial para comer con el cafe. Yo usé una tapita de una botella de 3 cm de diametro. Si tienen ganas les pueden hacer carita, con esta receta la galletita conserva su forma!!

Ingredientes
- 250 gr de harina de sorgo
- 100 gr de azucar
- 150 gr de manteca blanda
- 1 huevo
- 1 cdta de polvo para hornear
- ralladura de cascara de limon 

Instrucciones
Mezclar el polvo de hornear con la harina y luego todos los otros ingredientes hasta tener una masa homogenea. Envolver en film y dejar reposar media o una hora en la heladera. Precalentar horno a 180º. Retirar y estirar con palote hasta un espesor de medio cm, yo cubro la masa con un film para trabajar mas facil. Cortar las galletitas  Hornear por 18'-20' sin distraerse hasta que esten suavemente doradas. Buen provecho!!

Some while ago I bought Sorghum flour out of curiosity. Sorghum is a cereal originally from Africa, but nowadays is grown almost all aorund the globe. Historically was used to feed animals but lately due to it's high nutritional levels. I was thinking for some time what could I do with it and finally I dared. As I was not sure how it would behave I decided to do these cookies as a frist try as they are kind of unbeatable. I couldn't make it vegan, so it comes as Gluten free only, but I promise to try a vegan version soon. I recommend to cut the small, I used the a bottle cap, with a 3 cm diameter. They keep the shape so you can draw a smily face on them!!

Ingredients
- 250 gr sorghum flour
- 100 gr sugar
- 150 gr soft butter
- 1 egg
- 1 tsp baking powder
- zest of one lemon

Instructions
Mix the baking powder with the flower and then all the other ingredients until you get an even dough. cover with film and let it rest in the fridge for about half or one hour. Preheat the oven into 180º. Take the dough out of the fridge and roll it with a rolling pin. I cover it with a film to make it easier. Cut the cookies and bake them for about 18'/20' without going to far away until they are golden. Bon apetit!

Budin de mandarina. Tangerine Pound Cake.



El invierno trajo las mandarinas y me da ganas de hacer todo con ellas!!! Aca les traigo la receta de un budin muy facil y rapido de hacer sanito y delicioso. Yo pongo aca la version vegana pero siquieren hacerla con huevo en vez de chia funciona igual. Se necesita batidora o minipimer. Recomiendo elegir mandarina de cascara bien finita. Es una gran excusa para invitar a los amigas a tomar el te y combatir la bajon de los dias frios!

Ingredientes
- 2 1/2 ó 3 mandarinas
- 2 cdas de semillas de chia
- 130 gr de almidon de maiz
- 120 gr de harina de sarraceno
- 1 cdta de polvo para hornear sin gluten
- 200 gr de azucar mascabo
- 100 cl de aceite de maiz

Instrucciones
Lavar bien las mandarinas, en lo posible usar organicas pero si no consiguen, dejar las mandarinas en remojo con un chorro de vinagre de alcohol y luego enjuagar. Si tienen un cepillito tambien pueden darle una cepillada. Exprimir media mandarina y mezclar las 2 cdas de chia con 6 ó 7 cdas de jugo. Dejar actuar, se va a formar como un gel. En un bowl mezclar con batidor de varillas el almidon de maiz, el polvo de hornear y la harina de trigo sarraceno para que quede bien homogeneo. Precalentar el horno a 180ºC. Abrir por la mitad 2 mandarinas sin pelar y quitar las semillas. Poner en el vaso de la licuadora (o en un bol amplio si lo hacen con minipimer) las 2 mandarinas, el aceite, el huevo de chia y el azucar. Pulsar hasta lograr una mezcla homogenea, si es necesario entre licuada y licuada bajar con una espatula lo que va quedando en los bordes. Agregar de a poco la mezcla de harina, haciendo el mismo trabajito de ir bajando los costados para que se mezcle bien todo. Aceitar y enharinar un molde de budin. Una vez que esta todo bien bien homogeneo volcamos en el molde y horneamos  alrededor de 35 minutos o cuando este doradito y al pinchar con un palito de brochet salga con migas y no masa. Recomiendo comerlo en el momento o trozarlo y freezarlo. La pasteleria vegana y sin gluten tiende a cambiar bastante rapido su textura por lo que es recomendable freezar lo que no se consume el primer dia y descongelarlo cuando se quiera. Si gustan con el jugo de la media mandarina restante y azucar impalpable apta pueden hacer un glaseado. Que lo disfruten!!



Winter brought the tangerines and I feel like eating them in any way possible!!!I bring here a Pound Cake recipe, super easy and fast to do, healthy and delicious on top. The version here is vegan but if you are not vegan and you can usa an egg instead of the chia mix. I recommend using the thin skinned tangerines and organic ones if you find them. It is great excuse to invite your friends over for tea and fight the winter blues!

Ingredients
- 2 1/2 or 3 tangerines
- 2 Tbsp chia seeds
- 130 gr corn starch
- 120 gr buckwheat flour
- 1 tsp gluten free baking powder
- 200 gr mascabo sugar
- 100 cl corn oil

Instructions
Wash thoroughly the tangerines with the skin, if they are not organic immerse them in water with a dash of white vinegar let them rest there for a few minutes and rinse. Squeeze half tangerine and mix 6/7 Tbsp with the 2 Tbsp of chia seeds. Mix well and let rest to form the gel. In a bowl mix the corn starch, the baking powder and the buckwheat powder with a whisker. Preheat the oven to 180ºC. Cut the remaining tangerines in halves and take the seeds away. Put them in the glass of the blender or in a bowl if you use a hand-mixer. Add the oil, the chia mix and the sugar. Blend until smooth, if necessary use a spatula to bring down the dough climbing the sides. Slowly add the flour mix repeating the spatula process if needed. Oil and flour a pound cake tin. When the mix is totally even, put the dough in the tin and bake for around 36 minutes, or until golden and pinching with a brochette stick, it comes out clear I recommen either have it immediatly -yumm- or freeze it even a bit warm. Vegan gluten free bakery can change a lot the texture in the first 24 hours so even if you plan to eat the cake just a couple of days later it is better to freeze it in the meantime. Buckwheat Pancakes. Pancakes de trigo sarraceno.



Habia probado esta receta hace un tiempito pero estuve tan ocupadisima que no la pude postear. Hoy domingo helado pero soleado con las calles doradas de las hojas secas de otoño decidi mimarme con esto. Es una manera muy facil, sano y rica de entibiar la pancita. Aqui la receta, sientanse libres de cambiar la harina por la que tengan en casa y usar leche vegetal o de vaca si no son veganos.

Ingredientes
- 1 taza de harina de trigo sarreceno integral sin gluten
- 1 cdta de polvo de hornear sin gluten
- 1 pizca de sal
- 1 taza de agua (yo los hice con agua) o leche vegetal a gusto
- 1 cdta de vinagre de manzana
- 2 cdas rasas de pure de manzana
- 1 manzana
- 1 cda de canela
- jarabe de agave a gusto

Instrucciones
Mezclar en un bol todos los ingredientes secos, harina, sal, polvo de hornear. En otro bol mezclar los humedos, si usan leche no pongan el vinagre en este paso si no al final. Unir los humedos y seco mezclando con un batidor de varillas hasta obtener una mezcla homogenea. Dejar reposar 5 minutos. Mientras pueden cortar la manzana en rodajitas y espolvorear con la canela. Preparar una sarten antiadherente o de hierro y un poco de aceite de coco. Calentar bien la sarten, es importante que este bien caliente para que la masa se selle inmediatamente. Siempre conviene mezclar un poquito la mezcla porsi se asento de masiado. Agregar un pizquita de aceite de coco a la sarten hacer correr para que cubra la superficie y volcar una porcion de la mezcla. Esperar a que se hagan burbujas que se convierten en agujeritos y que los bordes esten sequitos y dar vuelta. Dejar dorar apenas unos segundos y repetir la operacion con el resto de la mezcla. Una vez hechos todos los pancakes, yo los arme asi, un pancake, rodajitas de manzana con canela y un chorrito de jarabe, otro pancake, y mas manzana y jarabe un ultimo pancake y un poco mas de jarabe. Tambien los habia probado con crema de chocolate y queda espectacular!!! les pongo la foto a modo de inspiracion!!! mmmññami!




I tested this recipe a while ago but somehow could not manage to post it. Today is a cold but sunny Sunday and I decide to treat myself with this. It is a super easy, healthy and delicious way to warm the belly and the heart. Here the recipe, feel free to change the flour if you do not have Buckwheat and to use milk or vegetable milk if you feel like it.

Ingredients
- 1 cup gluten free buckwheat flour
- 1 tsp gluten free baking powder
- 1 pinch of  salt
- 1 cup of water, or milk of your taste, i made mine with just water
- 1 tsp apple cider vinegar
- 2 flat Tbsp applesauce
- 1 apple
- 1Tbsp cinnamon
- Agave Syrup to taste

Instructions
Mix all th dry ingredients in a bowl. In a separate bowl mix all the wet ones avoiding the vinegar if you are using any kind of milk. Mix the wet and the dry thouroughly with a whisk and add the vinegar if you were using milk. Let rest 5 minutes. Slice the apple and sprinkle with the cinammon. Heat well a skillet or a non-stick pan, it's very important that it is really hot. Stir a bit the batter. add a tiny bit of coconut oil to the pan and pour a portion of the batter. Wait until it starts to bubble and the bubbles leave a tiny hole where they where and the borders are dry, turn them and let the golden a couple of seconds on the other side. Repeat until you finish the batter. I prepare mine like this, one pancake, slices of apple some syrup, another pancke more apple more syrup another pancake and more syrup. I also tried it with dark chocolate cream and it tastes amazing, I'll post also this pic. Yummy!!

Buckwheat Carrot cake. Torta de zanahoria con trigo sarraceno.

Se fue el verano de Berlin y me dio ganas de hornear torta! Hace rato que queria probar hacer alguna version de carrot cake. Y tambien queria hacer alguna receta en frascos. Me habia autoregalado para mi ultimo cumpleaños los frasquitos Weck's que son de vidrio templado y hacen unas hermosas tortitas individuales. Con esta cantidad saque 4 bastante grandes y creo que salen 6 medianos. O se pueden hacer unos 8 muffins medianos o 12 pequeños. Como soy una amante de los sabores simples, no hice ningun frosting sino que eche unas almendras fileteadas. Para agilizar un poco las cosas no ralle la zanahoria y la manzana a mano , sino que la pique con la procesadora Sale super tierna y jugosa pero ojo recomiendo comerlas recien salida del horno o freezar inmediatamente porque luego se pueden volver gomosas.
Yo las freeze y cuando me da antojo, tengo a mano una dulzura, sin gluten y ademas sana. Recuerden siempre freezar trozadas las tortas. Espero que les guste!!

Ingredientes
- 125 gr de premezcla (yo use Farina de Schaer)
- 100 gr de harina de trigo sarraceno
- 2 cdtas de polvo para hornear libre de gluten
- 1 cda de canela
- 3 cdas de lino molido hidratados en 6 cdas de agua y reposados 15' en la heladera
- 125 gr de azucar integral
- 100 cc de aceite de maiz o alguno neutro a gusto
- 200 gr de zanahoria rallada
- 1 manzana mediana rallada
- 1 trozo de jengibre rallado(a mi me encanta asi que puse uno grande)
- 150 cc de jugo de naranja
- un puñado de pasas de vuva (opcional)
- 3 cdas de almendras fileteadas(opcional)
 
Instrucciones
Preparar la mezcla de lino molido y agua y poner a reposar en la heladera. Precalentar el horno a 180ºC si es gas o 200º si es electrico. Engrasar y espolvorear, el o los moldes. Mezclar todos los ingredientes secos excepto el azucarcon un batidor de varas. En otro bowl mezclar el lino hidratado con el azucar y el aceite hasta que este bien homogeneo. Agregar la zanahoria, la manzana rallada y el jengibre y sumar el jugo de naranja y si quieren las pasas de uva. Mezclar todo bien hasta este homogeneo. Unir lo humedo y los seco y agregar un puñado de pasas de uvaLlenar el o los moldes por la mitad o maximo 2/3. A gusto agregar almendras fileteadas. Hornear 25' o hasta que esten doradas y al pinchar con un palillo salga limpio. A disfrutar para el te o para un desayuno de invierno.
 


 
Summer is gone from Berlin so I wanted to bake some cake. It is been a while I wanted to try some kind of carrot cake and also I got myself as a brithday present some Weck's jars, they can go to the oven and they are perfect for personal cakes like the ones I did. It shield 4 big personal cakes, 6 medium or you can also made them into muffins. I know carrot cake it's suppoused tohave a frosting but I don't really like them so I topped them withsliced almonds. Not to waste to much time grated the carrots, the apple and the ginger with the chopping tool of the handmixer. As many vegan and glutenfree recipes the texture is changing with the time so I recommend to eat them fresh out of the oven or freeze it in portions to eat later. It's perfect company for a nice tea or cold day breakfast. Hope you enjoy!

Ingredients
- 125 gr flour mix (I used Farina de Schaer)
- 100 gr Buckwheat flour
- 2 tsp baking powder
- 1 Tbsp cinnamon
- 3 Tbsp flax meal mix with 6 Tbsp water and rested 15' in the fridge
- 125 gr raw sugar
- 100 cc corn oil or any neutral of your taste
- 200 gr carrots grated
- 1 medium apple grated
- 1 piece of ginger grated
- 150 cc orange juice
- a handful of raisins (optional)
- 3 Tbsp of sliced almonds(optional)
 
Instructiones
Mix the flaxmeal with the water and let rest in the fridge for about 15 minutes. Preheat oven into 180ºC gas 200 electric.  Grease you cake tin, cake jars or muffinforms and dust them with gluten free flour. Mix thoroughly all the dry ingredients except the sugar. In another bowl mix the flaxmeal preparation with the sugar and oil until it's even and add the grated carrots, apple and ginger and if you want raisins. Mix dry and wet ingredients until the batter is smooth and fill the glass up half or maximum 2/3 of it.Top with the sliced almonds and bake for 25 minutes ir until the top is golden and/or when a toothpick comes out kind of clean. I love it as a company for a nice tea or a heartwarming cold morning breakfast. Hope you like them!!

Chickpea pancakes. Panqueques o ponques de garbanzo

 
Si, se dieron cuenta, estoy haciendo un poco de trampa...pero bueno es que me dio antojo y es taaan facil que pense que valia la pena postearlo igual. Esta receta es la hermana de esta otra de panqueques . 
Lo que tienen de bueno estos panqueques es que son una buena fuente de proteina y ayudan a empezar el dia con mucha energia sin ser pesados. Y quizas no se les habia ocurrido usarlos en version dulce. Yo los prepare esta vez con semillas de lino, girasol y lino, jarabe de agave y acompañe con uvas y frutillas, pero solo porque era lo que tenia. Pueden usar nueces picadas en vez de semillas, canela, y de topping pueden poner lo que gusten, dulces, miel, manteca de mani o pures de frutas. Buen provecho!!

 Ingredientes
- 1 taza de harina de garbanzo
- 1 taza de agua
- 1 cda de semillas de lino
- 1 cda de semillas de girasol
- 1 cda de semillas de sesamo
- 1 chorrito de jarabe de agave, arce o lo que mas les guste
- fruta a eleccion.

Instrucciones
Mezclar el agua y la harina en un bol con un batidor de alambres hasta que quede una mezcla homogenea. Dejar reposar 5 minutos. Mientras la mezcla reposa calentar una sarten un minuto, poner las semillas y tostar suavemente. Retirar las semillas tostadas y poner en un bol. Volver a poner la sarten al fuego. Si usan una sarten antiadherente no necesitan poner materia grasa, si no apenas un poquito de margarina o aceite de coco. Mezclar un poco la mezcla y tomar una porcion con un cucharon aproximadamente 3/4 de la capacidad y volcar en la sarten bien caliente. Cuando hace las primeras burbujitas echar un puñado de semillas tostadas. Cuando los bordes se empiezan a despegar, dar vuelta y dejar dorar unos momentitos. Repetir hasta usar toda la mezcla. Con una taza de harina yo saque 4 panqueques. Servir con un chorrito de jarabe de agave y acompañar con frutas frescas de estacion. Voila!


  
Ok, you got me cheating but i really wanted these for breakfast and they are soo easy i thought it was worth posting them anyway. Yes this is the sister recipe from this one.
The fantastic thing about these pancakes is that they are a good protein source, that gives you a boost to start the day and easy to digest.And maybe you didn't thought of making them sweet... i ate them with agave syrup and fresh strawberries and grapes because that was what I had at hand but it's also delicious with jam, honey, peanut butter and any fresh fruit you have around.

 
 Ingredients
- 1 cup garbanzo/gram/chickpea flour
- 1 cup water
- 1 tsp flaxseeds
- 1 tsp sunflowerseeds 
- 1 tsp sesame seeds
- 1 shot agavesyrup, maple syrup or topping of your choice
- fresh fruit

Instructions
Mix the flour and the water with a whisk until the batter is totally even. Let rest for 5 minutes. In the meantime heat a skillet and toast the seeds until softly golden. Set aside in a bowl. Put the skillet back in the heat and add some coconut oil or margarine if not using a non adherente one. Mix the batter to even  and pour 3/4 of a ladle on the hot skillet. When it start to bubble, prinkle with seeds. When the ends start to let loose turn and let golden for a moment. Repeat with the rest of the batter. With this recipe I got a 4 pancakes shield. Serve with a shot of syrup and garnish with fresh fruit. Voila!

Banana ice cream with honey walnut sesame brittle. Helado de banana con crocante de nueces, sesamo y miel




Probablemente la mayoria de ustedes conocen el helado vegano de banana. El helado mas facil y sano del mundo. Aca les traigo una variacion que invente para una cena que tenia ayer. Para darle un poco de sofisticacion, textura y porque no tambien calorias le agregue un crocante de miel, nueces y sesamo. Es una receta facil pero no hay que ponerse ansioso. Como la banana tiene que estar freezada mi truco es cuando una banana esta pasada, la pongo una bolsa y al freezer, y cuando quiero hacer heladito, ahi estan.

Ingredientes
para el helado
 - 5 bananas bien maduras, si de esas que estan un poco marrones, es importante porque esto es lo que le da el dulzor al helado. Bananas verdes no!

para el crocante
- 20 gr de manteca
- 100/120 gr de miel(yo puse una cucharada biiiieeeen gorda)
- un puñado de nueces
- un puñadito de sesamo

Instrucciones
Pelar y cortar las bananas en trozos grandes. Ponerlas en una bolsa y freezar, yo en general trato de tener alguna ya en el freezer, las guardo peladas  las dejo al menos una noche. Una vez bien congeladas las pongo en un bol y con paciencia y cariño les aplico la minipimer hasta que oh! magicamente se va convirtiendo en una hermosa crema. Seguir procesando, mezclando bien la crema para que no queden trozos solidos hasta que todo sea una crema. Poner en el freezer.
Para el crocante, preparar una bandeja o plato forrado con papel de hornear o silpat. Poner en una cacerolita si tienen con doble fondo la manteca y la miel hasta derretir bien. Agregar las nueces y el sesamo y revolver con paciencia, al principio va a empezar a burbujear y de a poco va a ir tomando color y espesandose. cuando la miel ya tiene un color dorado oscuro. Volcar la mezcla en sobre el papel de hornear y extender un poco. Mucho cuidado que el caramelo quema! Dejarlo enfriar completamente. Una vez frio va a ser bien rigido. Picar lo en trozos pequeños para que nadie pierda una muela y agregar al helado de banana mezclando bien para que todo el helado quede con crocante.

Probably you know already the classic vegan banana ice cream recipe. It is the easiest and healthier ice cream. Here I bring a variation i invented for a dinner i had yesterday. I added a walnut sesame brittle to give some sofistication and texture. It is very easy but it need some time, so don't get anxious. As we need already frozen bananas, trick is whenever a banana is already too soft, I just put them in the freezer in the bag so when I need them they are already frozen.

Ingredients
for the ice cream
 -5 ripe bananas, no green bananas, they have to be ripe for the ice cream to be sweet!

for the brittle- 20 gr butter
-100/120 gr honey (I used a very big spoon)
- a handful of walnuts
- half a handful sesame seeds

Instructions
Peel and cut the bananas in 3 or 4 pieces, put them in a bag and freeze the bananas, leave them 8 hours at least. Once frozen, lay them in a bowl and slowly process them with a hand mixer, it will look like it is not working but after a  bit of pulsing it will turn into a wonderful cream. Process all the bananas until there are no solid pieces anymore.
For the brittle, line a tray with a baking sheet. Put the bitter and the honey in a pan and let them melt. Add the nuts and sesame and stir  regularly/ It will start to bubble and slowly turn darker and thicker. Be patient it takes a bit of time, when it takes a nive dark golden color, spread the caramel on the sheet and let cool completely. Once cold it will be rigid. Chop it in small pieces to keep the teeth safe. Take the ice cream out of the freezer and
add the brittle mixing thoroughly to have a bit of brittle all over your ice cream. Enjoy!!
